In my kitchen, from-scratch cooking starts with meats cooked off the bone to develop rich flavor. From there, we add fresh vegetables and hand-cut aromatics. When a sauce is needed, we begin with the basics and build a proper roux. That foundation ensures depth, balance, and quality at every step.

We also create sugar-free desserts for residents managing diabetes. In addition, we accommodate dietary sensitivities, including garlic-free meals when requested.
We balance comfort foods with fresh, health-conscious options through thoughtful ingredient choices. For example, we use fresh sweet potatoes to create naturally sweet desserts. Instead of frying, we often bake and crust chicken for a lighter result. Our soups are prepared with fresh ingredients and without preservatives whenever possible. These choices allow residents to enjoy familiar favorites while supporting wellness.

One beloved resident favorite made entirely from scratch is Gran’s Apple Cake. This recipe continues to be a standout on our menu and carries a sense of tradition and comfort.
Cake Ingredients
20 cups sugar
6 cups applesauce
1½ cups oil
¼ cup vanilla extract
Beat together until well blended.
24 cups flour
¼ cup baking soda
¼ cup cinnamon
3 tbsp salt
Gradually add dry ingredients to the wet mixture.
22 cups diced apples
6 cups pecans
Fold apples and pecans into the batter.
Spread evenly into sheet pans and bake at 350°F for 30 minutes.
Homemade Cream Cheese Icing
1 block cream cheese
1½ cups butter, softened
¼ cup vanilla extract
12 cups powdered sugar
Mix until smooth and well combined.
